Ingredients for Vegetable Khichuri (Vegetable Porridge):Polao rice Mung dal (yellow split gram) Masoor dal (red lentils)
Vegetables: Potatoes, Sweet pumpkin, Carrots, Yardlong beans, Raw papaya, Ribbed gourd, Cauliflower, Bottle gourd, Pointed gourd, Turnip, Drum Stick, Cabbage and Spiny gourd,
Spices, and Other Ingredients: Soybean oil, Onions, Ginger, Garlic, Green chilies, Red chili powder, Turmeric powder, Coriander powder, Cumin powder, Cinnamon, Cardamom, Cloves, Bay leaves, Salt and water.
Procedure:
- Wash the rice and lentils, then drain the water.
- Cut the potatoes, sweet pumpkin, carrots, long beans, green papaya, bitter gourd, cauliflower, bottle gourd, radish, turnips, drumsticks, cabbage, and spiny gourd into square pieces and rinse them well.
- Heat oil in a pot and fry chopped onions.
- Add all the spices and sauté them.
- Then, add the vegetables and stir well.
- Now, add the rice and lentils and sauté lightly.
- Pour the required hot water, sprinkle salt, green chilies, and coriander leaves, and cover the pot.
- Once the rice, lentils, and vegetables are properly cooked, take the pot off the heat and serve hot.
