Tinolang Isda (Fish in ginger broth)

Fish Tinola Recipe (Tinolang Isda) - The OdehliciousIngredients:
Fish
Ginger
Camote (Sweet potato) tops
Oil
Onion
Black pepper
Fish broth cubes (optional)
Fish sauce (optional)

Instructions:
Heat oil in a pot.
Sauté garlic, onion, and ginger. Add the ground black pepper.
When the onion starts to get soft.
Pour the water and add the fish. Let it boil. Cover and then set the heat to low. Boil for 40 minutes.
Add the fish broth cubes and camote tops. Stir. Cover and cook for 5 minutes.
Put the malunggay and hot pepper leaves in the pot, and pour in the fish sauce. Continue to cook for 2 minutes.

Ginisang Ampalaya (Sauteed bittermelon and egg)

Ginisang Ampalaya (Sautéed Bitter Gourd)

Ingredients:
Bittermelon / ampalaya
Egg
Tomato
Oil
Garlic
Onion

 

Instructions
Place the ampalaya in a large bowl
Add salt and lukewarm water then leave for 5 minutes
Place the ampalaya in a cheesecloth then squeeze tightly until all liquid drips
Heat the pan and place the cooking oil
Saute the garlic, onion, and tomato
Add the ampalaya mix well with the other ingredients
Put-in salt and pepper to taste
Beat the eggs and pour over the ampalaya then let the eggs cook partially
Mix the egg with the other ingredients

 

Tinolang Manok (Chicken in ginger broth)

Chicken Tinola (Tinolang Manok)

Ingredients:
Chicken
Sayote
Ampalaya/bitter gourd leaves or moringa
Oil
Onion
Black pepper
Fish broth cubes (optional)
Fish sauce (optional)

 

Instructions:
Heat oil in a pot.
Sauté garlic, onion, and ginger. Add the ground black pepper.
When the onion starts to get soft, add the chicken. Cook for 5 minutes or until it turns light brown.
Pour the water, add sayote. Let boil. Cover and then set the heat to low. Boil for 40 minutes.
Add the chicken broth cubes and sayote. Stir. Cover and cook for 5 minutes.
Put the bittergourd/moringa leaves in the pot and pour the fish sauce in. Continue to cook for 2 minutes.

Served with Rice.

Pinakbet

Pinakbet Tagalog Recipe
Ingredients:
Eggplant
Okra
Squash
String beans
Fried/dried fish
Oil
Onion
Garlic
Ginger
Tomato
Shrimp broth cube/shrimp paste

Instructions
Heat cooking oil in a pot. Saute onion and garlic. Add ginger and continue to cook until the onion softens.
Saute for 1 minute.
Pour water. Let boil.
Add shrimp broth cube. Cover the pot and cook in medium heat for 20 minutes.
Add tomato and shrimp paste/bagoong alamang. Stir. Cover the pot. Cook for 3 minutes.
Put the squash into the pot. Cook for 7 minutes.
Add string beans, okra, bittergourd, and eggplant. Stir. Cover the pot and cook for 5 minutes.
Season with ground black pepper and add fried/dried fish. Cook for minutes.

Sinigang na isda (Fish in sour soup)

Ingredients:
Fish
Kangkong/water spinach
Okra
Eggplant
Tomato
Onion
Eggplant
Spinach
Sinigang mix/Tamarind

Instructions
Slice the fish as needed. Sprinkle salt all over the fish slices and then rub all over. Let it stay for at least 15 minutes.
Heat oil in a pan. Fry the fish slices until golden brown. Turn it over and perform the same step on the opposite side. Remove fish from the pan. Place in a clean plate. Set aside.
Boil water in a large cooking pot. Add tomato, onion, and radish. Continue boiling for 5 minutes.
Add sinigang mix. Stir.
Put the fried fish slices into the pot. Let the liquid boil. Adjust the heat between low to medium. Continue boiling for 7 minutes.
Add eggplant and long green peppers. Cook for 3 minutes.
Add okra. Cook for 3 to 5 minutes.
Season with ground black pepper and fish sauce.
Put the fresh spinach into the pot. Cook for 1 to 2 minutes.
